Ingredients:
2 cups of mild cheddar cheese (cubed)
1 cup of sharp cheddar cheese (cubed)
2 sweet red roasted peppers, cleaned of stems and seeds (reserve liquid)
1/4 cup red pepper roasting liquid
1 cup Mayonnaise
1 tablespoon hot sauce (Tabasco or similar)
1 tablespoon smoked paprika
2 tablespoons minced fresh hot red chili pepper
4 tablespoons minced red onion
6 tablespoons minced green tomato
Start by adding the cheese, roasted pepper, roasted pepper juice, mayo and paprika to the bowl of a food processor and run on high until smooth (for about 2 minutes).
Transfer to a bowl that can be covered and then add the minced vegetables, stir thoroughly and store in the refrigerator until cold.
Serve with toast or crackers. We like it with pita points, too.
This also tastes very nice in an omelet with ham.
