Holiday Pear in Cranberry Relish

Consider this dish for one of your Holiday Dinners. It is easy to prepare in the morning and adds color to the dinner offering.

Pear & Cranberry Relish

3-cups cranberries
3 ripe pears diced
1 ripe pear thinly sliced
¼-cup brown sugar
big pinch of salt
¼-cup orange juice
¼-cup water
½ -cup diced carrots
¼ -cup diced onion
4-tbsp butter

Sauté the onions and carrots in a saucepan over medium heat. Add the butter and stir for 3-5 minutes. Meanwhile, dice three ripe pears into the size of cranberries. Add the pears and the cranberries to the saucepan and stir. At this point, you can add the rest of the ingredients (except for the fourth pear) while stirring continuously. Lower the heat once a boil ensues. Simmer for ten to fifteen minutes. Then remove from the heat.

Take the final pear and remove the seeds. Thinly slice the fruit to place on top of the cranberry relish prior to setting the dish in the oven.

As dinner approaches, heat the oven to 400°F. Move the room temperature casserole into the hot oven. Bake for 15 minutes and serve with pork, chicken or salmon.
