Green Goddess Salad

Recipe serves 4

Ingredients for Salad Dressing:

1/2 cup buttermilk
1 cup greek yogurt (drain through a coffee filter first for at least 1 hour)
1/2 cup mayonaise
1/4 cup red wine vinegar
1/2 cup olive oil
4 tablespoons lemon juice
1 teaspoon sea salt
1 cup fresh spinach
1/2 cup fresh basil, cleaned and sliced
1/4 cup fresh parsley

Combine in a blender and run until smooth

Ingredients needed to assemble 4 salads:

1 head romaine, chopped
1 large cucumber, sliced thin (top to bottom) on a mandoline
1/4 cup shredded carrots
1 ripe tomato, chopped
1 ripe avocado, quarter and sliced

Toss the romaine with 1/2 cup of dressing in a bowl to coat lightly. Create a form on the plate to make a round container with the cucumber slice. Fill the cucumber cylinder with the dressed romaine, in the center of each plate. Place the avocado, tomato and carrot on the plate, then finish by swirling 3 tablespoons of dressing on each salad.
