Ingredients (serves 4):
6 Granny Smith apples
3 tablespoons butter
3 tablespoons agave syrup
Pre-heat oven to 450 degrees
Peel and slice the apples, add to a pan with butter and agave syrup, stir over medium heat until golden brown, add lemon juice. Set aside and prepare the batter.
4 cups (dry) General Mills Pancake mix (prepared with water only, as per directions, but less 1/3 of the water)
2 tablespoons sugar in the raw
2 teaspoons cinnamon
2 whole eggs
4 tablespoons fresh ricotta cheese
Mix together with a whisk
In 4 6 inch coated saute pans add 2 tablespoons butter each, place on medium heat.
When butter is melted pour 1 cup of batter into each pan.
Now add the apples and wait until the sides of the batter begin to bubble.
Place the pans in the hot oven for 8-10 minutes.
Serve on large plates with a spoonful of vanilla ice cream on each pancake.
Finish with powdered sugar and cinnamon, then serve the maple syrup on the side at the table.
