February Salad: Avocado & Red Grapefruit

Serves 2:


1 ripe avocado
1 red grapefruit
1/4 cup extra virgin olive oil
1 tablespoon cream sherry
1/4 teaspoon sea salt


Peel and slice the avocado thinly and place on a plate.

Remove the skin from the grapefruit and squeeze all juice from the tops and cut off peels.
Slice each section out and plate sections.
Squeeze any extra juice from the remaining grapefruit into a bowl.

Whisk grapefruit juice in a bowl with cream sherry, olive oil, and salt.
Dress the salad prior to serving.
