Apple Oatmeal Bars for the Hayground School

Yield: 90 cookies

Ingredients for oatmeal cookie mix:

  • 3 cups butter (soft)
  • 2 cups white sugar
  • 4 cups brown sugar
  • 8 eggs
  • 4 tablespoons vanilla
  • 4 tablespoons water
  • 2 teaspoons salt
  • 4 teaspoons baking soda
  • 8 cups a/p flour
  • 12 cups rolled oats

Cream the butter, eggs and sugars until smooth

Add vanilla, warm water, salt & baking soda

Add flour and mix completely

Add oats gently

To prepare apples:

Peel 10 large apples and dice to thumbnail size.

Place 1/2 lb butter in a large pot and stir, then add 1 cup sugar, stir.

Finally add the juice of 3 lemons combined with 1/2 cup water, 2 tablespoons cinnamon and a teaspoon of salt, simmer for 5 minutes until warmed through.

Remove from the heat, stir in 1 cup of flour and allow to cool.

Separate the oatmeal cookie mix into 2 batches.

On 3 1/2 sheet pans layer the first batch on the bottom of a lightly buttered pan.

Apples are mixed with cookie mix for the second layer

Combine the apples (draining the liquid off) with the second batch of cookie dough, mix gently and layer on top of layer #1.

Place the 1/2 sheet pans into a preheated oven at 350°F and bake for 12-15 minutes.

Remove, allow to cool, then slice into bars.

Optional: sprinkle finished sheet pans with cinnamon sugar.
